Our 21 Day Diet

 

Our weight improved 25 pounds in 21 days. Ruth lost 7 pounds the 1st four days; we dropped additional pounds and inches for weeks after Our 21 Day Diet ended.  We improved our memories & digestive systems eating ordinary foods (calling healthy organic whole foods ordinary), with no pills, or powders, or "diet food".

Our 21 Day Diet is designed to help heal on a cellular level, not simply just to be only a low-carbohydrate diet. Its low carb recipes are designed to cleanse your entire body. You get a colon cleanse and in addition, you clean the rest of you, head to toe, from the inside out. Two yardsticks that help you measure your progress are inches and pounds. Muscle weighs more than fat. If you lose a pound of fat and gain a pound of muscle, on a balance scale you will “weigh more” while clothes start fitting better in all the right places.

Menus:

Day 1 - Starting Our 21 Day Diet          Beginning Weight: Joe 216 lbs.; Ruth 149 lbs.

We drink about a half gallon of water daily & eat lots of whole foods.

 

Eat raw, organic, and locally grown foods where possible; what's important is, simply, to enjoy eating the foods on Our 21 Day Diet and not to eat foods that are not healing.

 

20 Minutes Before Breakfast:

 

Jade Juice Cocktail - our power drink to energize us for the day, from plants giving a quick protein boost.

 

 

Breakfast: homemade Yoghurt, topped with raw walnuts.

 

Snack: raw almond and cashew nuts.

 

Lunch: salad with cubes of raw cheese and deli turkey slices; water.

 

Snack: trail mix of raw sunflower and pine nut seeds, cashew and almond nuts; ricotta cheese.

 

Supper: Turkey Loaf; French beans; mushrooms; (dandelion and dock for Ruth; leaf lettuce for Joe) salad with wild—not African!—violet blossoms and "Zero Carb" Toppings; dandelion tea.

  

End of day comments: My teeth are much cleaner tonight than usual. I feel energetic and optimistic. –Ruth; I was hungry. –Joe.

 

Day 2

20 Minutes Before Breakfast: Jade Juice Cocktail.

 

Breakfast: homemade Yoghurt, sprinkling of raw walnuts; water.

 

Snack: mixture of raw nuts and seeds—almonds, cashews, pine nuts; sunflower seeds.

 

Lunch: Omelet Florentine.

 

Supper: onion stir-fry; dandelion tea.

 

End of day comments: Feel fine; look forward to tomorrow. We are enjoying eating plain good food.

 

Day 3

Before Breakfast: Jade Juice Cocktail.

 

Breakfast: homemade Yoghurt, topped with raw walnuts and raw butternut squash seeds.

 

Lunch: Mesclun Salad topped with homemade Ranch Dressing.

 

Snack: raw almonds; organic celery sticks (ribs stuffed with organic crunchy Valencia peanut butter); water.

 

Supper: organic butternut squash cooked in broth; mixed green salad (dandelion, leaf lettuce, spinach) topped with homemade Ranch Dressing; dandelion tea.

 

End of day comments: Wrapped up a productive day at 9:30 p.m. with a brief, energetic neighborhood walk and a nice smile.

 

Day 4

Before Breakfast: Jade Juice Cocktail.

 

Breakfast: homemade Yoghurt, topped with raw walnuts; dandelion tea.

 

Lunch: Turkey Loaf leftovers; raw almonds & cashews; water.

 

Snack: Cocoa Peanut Butter Candy.

 

Supper:

Almond-Crusted Salmon; organic butternut squash simmered in broth; kale; dandelion tea.

 

Dessert: Peanut Butter Pennies.

 

End of day comments: Joe donated platelets to the Red Cross today (14 gallons so far); feels fine. Ruth feels fine, too, after another productive day.

 

Day 5

Before Breakfast: Jade Juice Cocktail.

 

Breakfast: homemade Yoghurt, topped with raw walnuts; dandelion tea.

 

Snack: Mocha Peanut Butter Candy.

 

Lunches:

Joe - Almond-Crusted Salmon and organic butternut squash leftovers, green salad; water;

Ruth (out of town on business until Saturday night) - roast beef dandelion salad.

 

Snack: Joe - raw almonds and cashews.

 

Suppers:

Joe - Cheddar Cheese broiled chicken breast, French cut green beans, spinach salad;

Ruth - Mixed Vegetable Platter, steamed (snow pea pods, broccoli, bamboo shoots, water chestnuts, red peppers), dandelion tea.

 

Day 6

Before Breakfast: Jade Juice Cocktail.

 

Breakfasts:

Joe - homemade Yoghurt, topped with raw walnuts.

Ruth - cottage cheese topped with adzuki, lentil, & pine sprouts, rinsed, and raw pine nuts; Alvita dandelion tea.

 

Lunches:

Joe - leftover Cheddar Cheese broiled chicken breast;

Ruth - pinto beans, turnip greens, lima beans, garden salad.

Joe - raw almonds & cashews; water;

Ruth - raw pecans (still on the road, almost home).

 

Supper:

Joe & Ruth - Cheddar Cheese omelet (Joe - 3 eggs; Ruth - 1 egg).

 

End of day comments: Joe fixed a delicious supper for us. Ruth had worked up an appetite, walking briskly for hours through Brookgreen Gardens, S.C. (overcast, in the 50°'s).

 

Day 7

Before Breakfast: Jade Juice Cocktail.

 

Breakfast: homemade Yoghurt, topped with raw walnuts; dandelion tea.

 

Snack: Peanut Butter "Coffee" Candy.


Lunch: Pecan-Rosemary Mahi-Mahi, leftover kale, Almondine Green Beans, mixed organic greens salad topped with homemade Ranch Dressing; water.

Day 8 - Week Two of Our 21 Day Diet       Weight: Joe 206 (10 lbs.); Ruth 140 (9 lbs.).

Lunch: Onion Soup.

 

Snack: raw almonds, cherry tomato, cubes of Cheddar Cheese, celery rib, Granny Smith apple slice.

 

Supper: Turkey Medley; Fresh Salad.

 

End of day comments: We feel better than we did this time last week (& lost 19 lbs. between us, too)!

 

Day 9

Before Breakfast: Jade Juice Cocktail.

 

Breakfast:

Blueberry Beauty; ½ cup organic coffee with organic whole milk (and ½ t. xylitol, from a birch tree).

 

Snack:

 

Nutty Celery Sticks.

 

Lunch: Celery Soup; dandelion tea.

 

Supper:

 

Pecan-Crusted Chicken with Butternut Squash, leftover Almondine Green Beans, Leafy Green Salad with Ranch Dressing.

 

End of day comments: We felt full all day—happy and energetic, too! We did lots of work again today

 

Day 10

Before Breakfast: Jade Juice Cocktail.

 

Breakfast:

homemade Yoghurt, topped with fresh blueberries, raw walnuts, and wild—not African!—violet blossoms.

 

Lunch: leftover Pecan-Rosemary Mahi-Mahi and onion stir-fry served on a bed of (mixed) salad greens.

 

Snack: raw almonds & cashews nuts, sunflower seeds, chicken nugget, and a bite each of sautéed tilapia, Alaska salmon;  water.

 

Supper: leftover Pecan-Crusted Chicken, and Turkey Bake (fresh organic spinach and mushrooms added to leftover Turkey Medley, topped with raw Cheddar cheese); mixed organic greens salad topped with homemade Ranch Dressing; water.

 

End of day comments: Joe is glad he is not hungry and feels fine. I feel good, and so much lighter.

 

Day 11

Before Breakfast: Jade Juice Cocktail.

 

Breakfast:

homemade Yoghurt, topped with raw walnuts & wild—not African!—violet blossoms; dandelion tea.

 

Snack:

raw butternut squash seeds atop seasoned raw Cheddar/ricotta cheese stuffed celery sticks.

 

Lunch:

Kale Quiche.

 

Supper: grilled steak, snow pea pods, mushrooms & onions sautéed in butter, salad; water.

 

Dessert:

 

Chocolate Nut Torte.

 

End of day comments: We celebrated our half-way mark through our 21 Day Diet; we both feel great.

 

 

Day 12

Before Breakfast: Jade Juice Cocktail.

 

Breakfast: homemade Yoghurt, topped with raw walnuts; Hot Chocolate.

 

Lunch:

Lunch: Mushroom Soup.

 

Snack:

stuffed organic celery sticks and Chocolate Milk.

 

Supper: Pesto Pesco, Spinach Florentine, fresh green organic salad topped with organic mung bean sprouts and homemade Ranch Dressing; water.

Dessert:

Chocolate Nut Torte.

 

Day 13

Before Breakfast: Jade Juice Cocktail.

 

Breakfast: homemade Yoghurt, topped with raw walnuts; dandelion tea.

 

Lunch: Pesto Cheddar Cheese Omelet; water.

End of day comments: Got a lot done. Joe feels hungry, but forgot about the cake... Ruth feels stuffed.

 

Day 14

Lunch: Leaf salad with organic mung bean sprouts, organic snow pea pods, strips of Roasted Garlic Sirloin Tip Roast, and homemade Ranch Dressing; water.

Supper: wild-caught outdoor-grilled mahi mahi, organic snow pea pods, organic butternut squash, White Hearts of Daylily Shoots & Xeric "Zero Carb" Topping [good topping for World Water Day, each March 22].

End of day comments: We enjoyed receiving astounded excitement at how good we are looking now.

 

Day 15 - Week Three of Our 21 Day Diet  Weight: Joe 204 (12 lbs.); Ruth 139 (10 lbs.)

Before Breakfast:

Jade Juice Cocktail.

 

Breakfast: homemade Yoghurt, topped with raw walnuts; dandelion tea.

 

Snack:

Acorn Almonds (almond nut snack).

 

Lunch: Meaty Mushroom Soup.

Snack: raw almonds and cashews, and sunflower seeds.

 

Supper: grilled beef burger topped with raw Cheddar cheese, organic onion slices, mung bean sprouts, sliced white button mushrooms, fresh raspberries, homemade Pesto, and homemade Ranch Dressing on a bed of salad greens (dandelion and shepherd's purse for Ruth, leaf lettuce for Joe); water.

 

End of day comments: We feel great, and enjoy raking in all the compliments about how great we look.

 

Day 16

Before Breakfast: Jade Juice Cocktail.

 

Breakfast:

homemade Yoghurt, topped with fresh raspberries and Acorn Almonds; dandelion tea.

 

Lunch: Dumpling Soup; dandelion tea.

Snack: Otsep (an "inside-out pesto snack - Otsep is "Pesto" spelled backwards) & Walnut Pesto Bites.

 

Supper:

grilled chicken, Quick Red Cabbage, fresh salad with rinsed organic mung bean sprouts and homemade Ranch Dressing; water.

 

End of day comments: We accomplished a lot today, feel great—eat great, and look great. Great diet!

 

Day 17

Before Breakfast: Jade Juice Cocktail.

 

Breakfast: Pancakes with organic sweet cream butter and homemade Syrup; Hot Chocolate.

 

Lunch: homemade Yoghurt, topped with fresh raspberries and raw walnuts; water.

 

Snack:

Acorn Almonds; dandelion tea.

 

Supper:

Chicken Lettuce Wraps; water.

 

Dessert:Chocolate Nut Torte.

 

End of day comments: Feeling better than great, looking forward to tomorrow! This diet is the very best!

 

Day 18

Coconut Flour Crepes; Chocolate Milk.

 

Lunch: Chicken Soup.

 

Snack: raw nuts and raw cheese.

 

Supper: Chicken-Stuffed Crepes (make Crepes, refrigerate, reheat, stuff, and serve); water.

 

End of day comments: Over the past couple weeks we've both noticed our digestive systems improved.

 

Day 19

Before Breakfast: Jade Juice Cocktail.

 

Breakfast:

Hot "Cereal"; dandelion tea.

 

Snack: mixed raw nuts.

 

Lunch:

Chicken and Dumplings; water.

  

Snack:

Egg Cream Shake.

 

Supper: Vegetable Soup; followed by grilled organic 100% grass-fed sirloin steak,

 

Vegetable Medley, leftover Quick Red Cabbage, organic leafy green salad topped with wild violet blossoms and homemade Ranch Dressing; water.

 

End of day comments: We both feel fine & are not hungry. We've both been eating so much good food!

 

Day 20

Before Breakfast: Jade Juice Cocktail.

 

Breakfast:

Hot "Cereal" with fresh organic blueberries and raw nuts; water.

 

Snack: Apple Streusel.

 

Lunch: leftovers.

 

Snack: fresh organic blueberries with organic heavy cream; raw Swiss cheese and nuts; dandelion tea.

 

Supper: "Spaghetti" and Meatballs; organic green salad; water.

 

Dessert: Berry Upside-Down Cake.

 

End of day comments: We've eaten so well over the past three weeks; we look well and feel well, too!

 

Day 21

"Spaghetti" Alfredo and Sautéed Mushrooms with Pine Nuts; water.

Start of the day March 9, 2009 up to the start of the day March 30, 2009:

 

Our 21 Day Diet

We succeeded!!!

Memory, digestive system, & weight improved.

 

Beginning Weight: Joe 216 pounds; Ruth 149 pounds.

Weight - Week 1: Joe 206 (-10 pounds); Ruth 140 (-9 pounds).

Weight - Week 2: Joe 204 (-12 pounds); Ruth 139 (-10 pounds).

Ending Weight - Week 3: Joe 202 (-14 pounds); Ruth 138 (-11 pounds).

Between the two of us we did, indeed, lose 25 pounds in 21 days.

 

Our kept health improving, even over three weeks after finishing the diet.

1st week (Day 28): Joe dropped a belt notch size; Ruth dropped a pound (to 137).

2nd week (Day 35): Joe dropped a pound (to 201); Ruth dropped a clothing size.

3rd week (Day 42): Joe looks so much better; Ruth dropped yet another clothing size.

We're moving quicker and easier, have more energy and good skin tone, & feel better.

 

Our 21 Day Diet is simple.

 

The only thing we changed was the kinds of food we ate.

We didn't change our routine, nor exercise any differently.

Our food quantity stayed the same; the quality improved.

We ate when we were hungry. We felt better, day by day.

We didn't eat/drink diet pills, diet powders, or "diet food".

We didn't undergo any medical procedures or treatment.

We didn't need to keep records, or count anything, at all.

We could continue on this diet, if we wantedit's healthy.

 

We lost a lot of weight immediately. Ruth lost 7 pounds in 4 days. That was encouraging. It was also encouraging we didn't continue that rate of weight loss, nor was that our goal.

 

We accomplished 3 major goals: 21 Day cellular level cleanse; teaching our bodies to burn fat as a primary fuel; enjoying good food—as much & as often as we wanted to eat!

 

Next we start an exercise program. Our diet is simple—no counting—and our exercise program is simple—21 minutes/day, 6 days/week for 21 days, no equipment necessary.

 

Anyone can lose weight; that's only part of the story. A big reason we went on this diet is for the extra weight we dropped off, to stay off. After a year, for each of us, half of it had!

 

...Now about a year has gone by, and we decided to start Our 21 Day Diet again today:

 

2nd time on Our 21 Day Diet, Feb. 27, 2010 afternoon to Mar. 20, 2010 afternoon:

Start Weight: Joe 209 (-7 pounds from our March 2009 start); Ruth 143 (-6 pounds).

Weight - Week 1: Joe 201 (-1 pound from Our 21 Day Diet 2009 end); Ruth 137 (-1 lb).

Weight - Week 2: Joe 200 (-9 pounds from our Feb. 2010 start); Ruth 137 (-6 pounds).

End Weight - Week 3: Joe 199 (-10 pounds); Ruth 137 (-6 pounds), & 2 sizes smaller.

 

Differences to note on Our 21 Day Diet in 2010, compared to this time a year ago:

After the first day, neither of us got very hungry & we snacked much less between meals.

We did not shed pounds as dramatically as we did last year; a weighty surprise to Ruth.

 

Similarities to note on Our 21 Day Diet in 2010, compared to this time a year ago:

We are noticing increased energy and alertness as we turn—from sugar—to burning fat.

We feel good, look good, eat well—and as much as we want; our clothes fit much better.

Start
Weight: Ruth 129 pounds (-20 pounds from our March 2009 start).

Joe hasn't started on Our 21 Day Diet again yet; he is starting to get inspired to do so.

Weight - Week 2: Ruth 127 pounds (-16 pounds from Our 21 Day Diet 2009 end).

End Weight - Week 3: Ruth 125 pounds (-18 pounds from Our 21 Day Diet 2009 end).
